I have to pull out my rifle for both of them, because they are just to dangerous to melee. Mordrem Rolling Devils have no defiance bar, so they are next to impossible to pin down long enough to melee. They also attack 3-4 times per second, and that makes ANY hit from them lethal, even for a warrior like myself. Cavaliers are easy to take care of if you can put your back to a wall so that their charging attack doesn't send them too far away, but out in the open, you'll have a hard time meleeing them.
Outside of those two, I only ever get bothered by Mordrem Leeching Theashers and Mordrem Snipers, and even then only when I'm preoccupied with other enemies; They are easy enough to kill at any range if focused on.
Even the Itzel/Mordrem Bladedancers and Shadowleapers aren't much of a problem once you learn the tells on their lethal attacks. The only truely OP enemies are ranked Elite and above, and only because of their Damage and Health inflation

Oh, definitely agreed on the Elites. I've always been of the Morrowind-like mentality though in that it's okay to have to struggle until you make it to the top, but once you're a level 80 with rare or better gear, I'd much rather most enemies be a cake walk so I was more free to explore and enjoy the incredible amount of detail they put into the art and world design. But then, I'm also a role player in-game - I spent at least 90% of my game time RP'ing. Which is why after 3.5 years of playing GW2, my most travelled character only has 62% world completion. XD
The difficulty (artificial or not) makes it fun for me, and adds to the atmosphere of the situation: You're stuck in enemy territory, and time is not your friend. EVERYTHING is trying to kill you, from the fungi and wildlife to the enemy you seek. Any step could lead to an ambush, every corner requires caution, and worst of all, you're never safe. Mordremoth can summon his minions from any patch of grass, tree, or even the sky at ANY time.
All this is made worse in that, if you do die, and your body isn't recovered in time to be revived, or burned if its too late… The Mordrem will take your corpse, and use it to create another Mordrem minion, OR WORSE, use your body as a template for extra powerful Mordrem that can be replicated indefinitely! (Just like Blademaster Diarmid)

Eww... nasty point about them. Only thing I wish they would do though is have the modrem up for a limited time. After all, story-wise, you eventually defeat Mordremoth, so... one would hope eventually they are purged from the lands.
Though heh, the fungi definitely made me laugh when I first saw them. XD I do find that new HoT zone very interesting for how definitely character builds play out there. My engineer is pretty much unable to travel alone - too squishy and insta-dies if I'm not paranoid about where I go. The warriors have an easier time of it, and my Guardian/Dragonshunter is really tough (Cleric build) and seems to have less worry.
