Curry Apricot Chicken (with ham)
Ingredients
Using a Crock-pot/slow cooker
1kg cubed chicken
200g ham leftovers (I had a ham bone from Christmas to use up. I cut off as much meat as possible and put the bone in the freezer for later use)
15 very ripe apricots (These were fresh off the tree but somewhat on the small side, wash, remove seeds and cut in half or quarters)
1kg baby potatoes (washed)
1 large carrot – washed, peeled and cut into batons)
1 x 400g can diced tomatoes
1 x 225g can pineapple pieces in natural juice (use the juice too)
1 tbsp Rosemary powder
1-2 tbsps Keens Curry Powder (more or less to your personal taste)
Salt and pepper (about 1 tsp of each or to your taste)
1 small bag baby spinach
1 small tin baked beans (any type)
2 granny smith apples (peeled, cored and cubed)
2 tbsps Worcestershire sauce
2 tbsps sweet chilli sauce
500ml water
To Thicken
Your choice of thickener if required - this can be corn flour and water, gravy mix, noodles or even dried instant potatoes
Method
Place the potatoes on the bottom, add in all other prepared veg, tinned items and fruit, spices, sauce etc
Put the cubed chicken pieces in last and add enough water to bring the liquid content about half way up the sides of the pot.
Cook on high for about 4 hours can be left on a lower setting for longer.
If you need to thicken the dish: mix a few tablespoons of corn flour with a little water to make a slurry and stir this through and let it cook a little longer. Alternately, stir through powered gravy mix or powdered instant potato mix or break up some instant noodles and submerge them in the liquid, they will absorb excess liquid.
Serving
Toasted breads, Crusty bread, Naan bread, Turkish bread, rice, mashed potatoes and pasta are all great things to serve with this however they are not necessary. Some people like to have a nice bit of spiced yoghurt, plain yoghurt, pickled vegetable or salads on the side.
Notes:
This is a great dish to use up leftovers from BBQs, leftover roasts (meat or veg) tired veg, Christmas/new year meats etc. It’s one of those dishes that almost anything can go into the crock-pot to come out succulent and delicious. One of my favourite versions is to use diced goat, rabbit or mutton (old sheep) instead of chicken.
